Combine the following ingredients in a bowl: chia seeds, coconut milk, maple syrup (optional for sweetness), vanilla extract. Stir well so that the chia seeds are covered with the liquid.
Cover the bowl and place it in the refrigerator for at least 4 hours — or preferably overnight — so that the chia seeds expand and develop a pudding-like consistency.
Remove the bowl from the refrigerator and stir the pudding thoroughly once more.
Put the chia pudding in a glass and garnish it with whatever you like, such as fruit and coconut flakes.
